Health Benefits of Chicken Marsala

To conclude our focus on National Nutrition Month, this week’s featured dish from our Signature Dining program is chicken marsala. The chicken in this dish is not only low in saturated fats, but it is an excellent source of protein, vitamins and minerals. Mushrooms, which are featured in the gravy for this dish, are high in calcium and fiber as well. Our chicken marsala dish offers the seniors a delicious meal that is loaded with benefits for their health.

4 boneless chicken breast
2 tablespoon oil
6 button mushroom
2 shallot sliced
3 tablespoon ap flour
4 oz marsala wine
2 tablespoon fresh chopped parsley
1 teaspoon cold butter
Season chicken toss in flour heat a sautéed pan over medium high heat place chicken in oil cook till brown then remove and add the shallot and mushroom cook for 2 minutes then add the wine cook the chicken until it reaches 165 transfer chicken breast to plate and spoon mushrooms and shallot sauce over the top
